Grandma Shockley's
Chocolate Bit Cookies
My Grandma Shockley made the best chocolate chip cookies I ever tasted. (We called them chocolate bit cookies back then.) She died when I was 12 years old, so I never got a chance to ask for her recipe and when I began making them for my children in the 1970s my cookies just didn't taste as good as hers.
One day, a couple of years ago, I was looking through an old recipe box of hers, that I'd looked through many times before, and found the prized cookie recipe. Lo and behold, there was one small difference in the recipe from the one found on the back of the yellow package of chips. I was so excited that I made a batch right away, and when I tasted the first cookie I was transported back to the pleasure of my childhood—it was just like Grandma's. The secret is in the balance of the sugars.
Cream together:
2 sticks butter, softened
1/2 cup white sugar
1 cup brown sugar, packed
2 eggs
1 t. vanilla
Then mix in:
2 1/4 cup flour
1 t. salt
1 t. baking soda
Fold in:
1 12 oz. package of chocolate chips
Drop by spoonfuls onto a cookie sheet and bake at 375 degrees until lightly browned. Cool on racks and serve with a cold glass of milk. Enjoy!
